Truffle Garlic Butter Wild Mushroom Pasta

Ingredients
- 100 g oyster mushrooms, torn or sliced
- 100 g cremini mushrooms, sliced
- 100 g shimeji mushrooms, trimmed
- 3 garlic cloves, finely chopped
- ⅓ bunch fresh thyme, leaves picked
- 2 small chilies, finely sliced (optional, to taste)
- ⅓ bunch fresh parsley, chopped
- 500 mL heavy cream
- 60 g Parmesan cheese, finely grated, plus extra for serving
- 250 g short pasta, such as rigatoni, penne or fusilli
- ½ stick Butter Bar Truffle Butter
- Salt and freshly cracked black pepper, to taste

Instructions
- Cook the pasta. Bring a large pot of generously salted water to a boil. Cook the pasta until al dente according to package directions. Reserve about ½ cup of pasta water before draining.
- Sauté the mushrooms. While the pasta cooks, heat a large skillet over medium-high heat. Add a little of the Butter Bar Truffle Garlic Butter, followed by the oyster, cremini and shimeji mushrooms. Sauté until golden and tender.
- Add the aromatics. Add the garlic, thyme and chili. Cook for 1–2 minutes, stirring frequently, until fragrant.
- Make it creamy. Reduce the heat to medium and pour in the cream. Simmer gently until the sauce begins to thicken.
- Add the Truffle Garlic Butter. Stir in the remaining Butter Bar Truffle Garlic Butter and Parmesan until melted and the sauce is smooth and glossy.
- Toss with pasta. Add the drained pasta and parsley to the skillet. Toss until every piece is coated in the creamy mushroom sauce. Add a splash of reserved pasta water if needed to loosen the sauce.
- Finish & serve. For an extra boost of truffle flavour, finish with 1 tablespoon of truffle oil. Serve immediately with freshly grated Parmesan and cracked black pepper.
